Veggie Chili





I have this really helpful app on my phone called "spark recipes". It gives healthy recipes depending on your dietary needs, meal, ingredients, etc.

Today we decided to try out the Vegetarian Chili, with our own spin.

You take a can of crushed tomatoes and add kidney, pinto and black beans. We then added a can of Rotel and whole tomatoes and some chili powder. That's it!

It is very filling and packed with tons of protein.

And something I enjoy after every meal is a cup of tea. Yogi is my favorite. It's made with organic ingredients and it's a healthy alternative to coffee.

Beauty and the Beast

Tonight Matt and I saw Beauty and the Beast at the KMC community theater. It has been quite some time since I've been to a community theater production, and it was Matt's first time. There were so many little girls. It was precious!

I'm trying to get Matt to try out for The Producers, which starts in May. He doesn't seem to be interested, ha!

Here is what the sloppy joes and cheese fries look like. Add sloppy joe to the cheese fries and you have yummy chili cheesy delights!

Healthy Chili Cheese Fries

Say it ain't so. This is one of my most beloved dishes that I have missed since becoming a vegetarian. And this discovery all happened by chance, as Matt and I were preparing our favorite meal, veggie sloppy joes with sweet potato fries.

For our sloppy joes we sauté half an onion in a pan and then add meatless veggie crumble (we use Morningstar because that's what they carry at the commissary, but there are better ones out there). Once it starts to brown, add a can of Rotel and then organic tomato paste (salt free if that's an option). Let it simmer until it achieves the consistency to your liking, and you have sloppy joes!

This is where we could add it to whole wheat bread with a couple of slices of tomato, but you would simply top your sweet potato fries with it. How do you make these fries, one might ask? Simple.

Peel half a sweet potato per person and cut them into then fry strips. Toss in olive oil and Mrs. Dash, then place them in a 300 degree oven until soft. They rarely get crispy this way, but I refuse to fry them.

This is where Matt got innovative. He added cheese to his fries. Then I thought, heck, that would be delightful with sloppy joe on top. Eureka!

For vegan chili fries, simply omit the cheese :)

Home again

Matt and I are officially in our home! We moved in yesterday and love it. Patton possibly loves it more. He keeps running around in the backyard like a crazy pup.

Not many of our things were damaged in the move, thank goodness. However a side table was delivered with a whole in it and my grandmother's china was smashed. So that sucks. But we have heard horror stories and it could have been a lot worse.

We are trying to settle in, but we won't be really settled until our new sofa gets here next week!
Matt and I both love modern German furniture, and are so excited to make our first big purchase!

More of the Schloss, and OUR Castle :)



In addition to visiting the castle, we picked up the keys to our house!! Our things will be arriving on Monday, but it sure is nice to have those keys :)

Heidelberg Schloss



Matt and I visited Heidelberg on New Year's Eve. It was our first castle (besides Disney, of course), and quite fun. Though most of the castle is under construction, not to be completed until this Summer, we got to see the Germany Pharmacy Museum as well as the wine cellar. I mean, isn't that appropriate? We go to visit a castle and all we get to see are the history of drugs and a storage area for alcohol.
